Diet and Nutrition Department: Any organic waste that is suitable for recycling or reuse is handed over to the university's Diet and Nutrition Department.

Student Projects: This material is assigned to students as project work. The students then utilize this raw material to create various products. This not only turns waste into valuable items but also provides students with hands-on training in sustainable resource management.

Project Details:

Pomegranate (Punica granatum) peel, often considered organic waste, is a rich source of bioactive compounds such as polyphenols, flavonoids, tannins, punicalagin, ellagic acid, and gallic acid, which provide strong antioxidant and therapeutic effects. Pomegranate peel tea, prepared by cleaning, drying, and grinding the peel into fine powder, offers higher antioxidant levels than the fruit’s juice or seeds, making it valuable for nutraceutical and functional food use. This herbal infusion supports cardiovascular health, regulates cholesterol, reduces oxidative stress, improves metabolism, aids digestion, boosts immunity, and helps manage inflammation. With its slightly astringent fruity flavor, the tea serves as a daily health-promoting beverage while contributing to sustainability by utilizing fruit by-products that would otherwise go to waste.
